Heat 2 tbsp vegetable oil in a large wok or skillet over high heat until it shimmers.

Add the green bean pieces and stir-fry for 6-7 minutes until they turn dark green with some blistered edges. Transfer to a plate.

Add remaining 2 tbsp oil to the wok and reduce heat to medium.

Add the minced garlic, dried red chilies, and Sichuan peppercorns. Stir constantly for 30 seconds until fragrant.

Return the green beans to the wok and toss to combine with the aromatics.

In a small bowl, whisk together soy sauce, rice vinegar, sugar, sesame oil, and water.

Pour the sauce over the green beans and toss everything together for 1-2 minutes until evenly coated.
